A fresh ‘n’ fruity summer salad!

Good afternoon lovelies. For our Aussie readers, we hope you indulged in some Australia Day fun yesterday? We hosted a BBQ for dear family and friends and thankfully the rain held out for most of the day. Mr Lovely did a bang-up job cooking the meat and we had a few fabulous helpers who bought along some delectable bites.

One of our favourite new finds was this Orange, Craisin and Spinach salad which only took about 5mins to make and was soooo good that we really thought you all needed the recipe too. The goat’s cheese makes it a little bit posh and its creamy texture is a natural partner to the orange.

Orange, Craisin and Spinach Salad

1 bag of English spinach leaves, washed
2 small oranges, peeled and segmented into thin slices
1/2 cup craisins (dried cranberries)
Small packet of goat’s cheese
2 tablespoons balsamic vinegar
4 Tablespoons extra virgin olive oil

Combine spinach, orange and craisins in a large salad bowl. With a knife, break of small pieces of goat’s cheese into the bowl (it will be quite creamy, so they might be more like little blobs, depending on which brand you buy). Combine vinegar and oil in a small measuring jug and whisk to combine. Drizzle dressing over bowl and toss through to coat.
